What is Marzipan?

Marzipan is a confectionery paste consisting of finely ground almonds that have been sweetened with powdered sugar or honey and sometimes held together with raw egg whites. Some variations will use honey or other binding ingredients in place of the raw egg white. It can be used to decorate cakes because of its pliability, but can also be eaten as-is or coated in chocolate, etc.

It is not to be confused with almond paste, which is less sweet and mainly used as a filling.

FAQs

What is the best use of marzipan? ›

As the seasons change, and pumpkin spice turns into peppermint, so too does marzipan begin appearing in pastry cases. You may have seen it molded into fruit shapes or tiny Santas, or perhaps as a filling or topping on cakes, pastries, or cookies, like the outer layer of a traditional British Battenberg cake.

Do you refrigerate marzipan? ›

As long as it is kept cool or refrigerated, marzipan has a long life, months at least. At warm or room temperature the almond content will slowly oxidise and develop off flavours.

How to stop marzipan from cracking? ›

Like sugarpaste, marzipan will start to harden when it is exposed to the air so keep any unused marzipan tightly wrapped in plastic food bags. It does not need to be kept in the fridge. Keep a bowl of icing sugar handy.

What to do if marzipan is sticky? ›

If you have ever made fresh marzipan, you know how sticky it is. Fortunately, drying it out makes it much easier to work with. It dries out normally on its own when exposed to air. You can mix a quick-drying powder into fresh marzipan to cut out even more of the wait.

How are you supposed to eat marzipan? ›

Marzipan is used in a variety of dessert and candy recipes, including everything from cookies and cakes to truffles and pralines. Marzipan is also often dyed and shaped into miniature fruits to be enjoyed on their own or used to decorate cakes.

What is so special about marzipan? ›

Both products are made with sugar and almonds, but marzipan has a candy-like flavor and a secret ingredient–an egg white–that makes it smooth and moldable. Almond paste, on the other hand, is coarser in texture and less sweet, making it better suited for use as a filling.

How to tell if marzipan has gone bad? ›

If the marzipan has turned hard, overly dry and brittle, or shows any signs of mold, it's definitely time to throw it away.

Do I cover a cake after marzipan? ›

The videos below give great tips on how to trim it neatly and create the perfect base for icing your Christmas cake. Leave the Christmas cake covered in marzipan in a cool, dry place. Allow it to dry for at least 24 hours before covering with fondant icing, and at least two days before covering with royal icing.

Do you put apricot jam between marzipan and icing? ›

Brush your cake with warmed and strained jam (light-coloured jams, such as apricot, work best). Dust a work surface with icing sugar and roll out a generous amount of marzipan to the thickness of a pound coin (there should be plenty of overhang).

Can you overwork marzipan? ›

Exercise caution to avoid excessive kneading, as overworked marzipan may develop an oily texture and lose its smooth, clay-like consistency. If this occurs, knead a small amount of simple syrup to rebind the oils and solids. Additionally, more confectioners' sugar can be added to restore the original consistency.

Can you buttercream over marzipan? ›

Yes, marzipan can be cloyingly sweet in large amounts, which is why I've used it here sparingly. It's paired it with a smooth, dark chocolate Swiss meringue buttercream. Together, they balance each other perfectly.

What is the difference between white and yellow marzipan? ›

Comparing the ingredients of M&S white and golden marzipan, it's just colouring. Whether it's leftover loaves or banana bread, we all need somewhere to store baked goods. We've rounded up the best bread bins to buy to keep things fresher for longer.

How do you refresh marzipan? ›

SOFTEN IT IN THE MICROWAVE

If your marzipan is very cold and hard when you start to use it, you can soften it gently in the microwave for 5-10 seconds. Repeat if necessary. Please take care not to over-heat it though, as the oil in the marzipan can get very hot and could burn you and will separate from the paste.

What is best to stick marzipan to fruit cake? ›

-Brush the top of the cake with the sieved jam and then leave a few minutes for it to set. (This helps the marzipan stick to the cake.) Turn the cake upside down onto the marzipan and wiggle it gently so the top is stuck firmly. -Trim any excess marzipan leaving a 2cm/1in border.

How to stick marzipan to cake without jam? ›

Brush a little (cooled) boiled water over the marzipan and also the exposed board. (If you don't want to ice the board, then obviously don't wet it!) This is to make the sugarpaste stick. Lift and drape the sugarpaste over the cake, following the same process as the marzipan.

Can marzipan be eaten raw? ›

Marzipan can be eaten raw and is used to make candies, ice cakes, or as a filling. Almond paste is similar to marzipan, but it has more almonds and less sugar.

What are the benefits of eating marzipan? ›

1 Because marzipan is based on almonds, it is a sufficient content of vitamin E, in fact, as in the walnut. This vitamin in nature is a very powerful antioxidant and helps to fight stress and nervous tension.

Where is marzipan most popular? ›

Marzipan is common all over Europe, the Middle East and Latin America primarily, and to a lesser extent, parts of Southern and Southeast Asia with European influence such as Goa and the Philippines.

How long does marzipan keep? ›

It will keep in the fridge for up to 6 weeks. If using it to cover a cake, the marzipan must be allowed to fully dry on the cake for 2-3 days before applying the sugarpaste. Dry marzipan kept it in a cool dry place should be fine for 2-3 months.
