Hot brown casserole hails from Louisville, Kentucky. It’s a recipe that was created as a meal version of the popular hot brown sandwich.
A hot brown sandwich is an open-faced turkey sandwich topped with sliced tomatoes, melted cheese sauce, and crispy bacon strips.Turning this into a casserole is pretty easy – you just lay the ingredients down in layers and bake it all.
Kentucky Hot Brown Casserole
The real challenge came from making a sandwich casserole low-carb. To do this, I made a bread layer out of fathead dough. Fathead dough is made from a mixture of mozzarella cheese, cream cheese, almond flour, egg, xanthan gum, and spices.
I love using fathead dough as bread because it turns out perfectly fluffy every single time. I used it before in my hot Italian sub casserole, so it’s perfect for this one too.

This is an easy recipe to make ahead or to turn into a freezer meal. You can even use it in your meal prep!
To make it ahead, just bake it like normal and then seal the dish with a lid and store it in the refrigerator for up to three days.

If you want to make it into a freezer meal, just let it cool completely. Then store it in a freezer-safe container. Keep it in the freezer for up to six months.
Sides With Kentucky Hot Brown Casserole
You don’t need much to turn this into a full meal. It is really filling all by itself. If you want to add some sides to the table, serve it with some keto cauliflower cranberry walnut salad.
It has a delightful crunch and sweet flavors. For some spice, make jalapeno oopsie bread. It’s light but spicy.
For dessert, some spongy keto pumpkin angel food cake is perfectly sweet to balance out all the savory and salty flavors.
Keto Turkey Bacon Recipe
The recipe for hot brown casserole calls for cooked turkey breast. Some classic hot brown casseroles also include sliced ham. If you add ham, make sure it isn’t honey or glazed ham.

Ingredients:
For the bread layer:
Mozzarella cheese shredded
Cream cheese
Almond flour
Egg
Xanthan gum
Baking powder
Garlic powder
For the topping:
Sliced cooked turkey breast
Crumbled bacon
Roma tomatoes
For the sauce
Heavy whipping cream
Chicken broth
Parmesan cheese grated
Butter
Salt and pepper
Instructions:
Heat the oven to 350 degrees, and grease a 9×13 baking dish well.
Place the cream cheese and mozzarella cheese into a bowl that is microwave safe.
Heat the cheeses at 30 second intervals until melted and combined well.
Add the cheese mixture to a mixing bowl with the rest of the bread layer ingredients, and blend until smooth.
Press the dough mixture into the bottom of the baking dish and bake for 20 minutes. While the bread layer is baking, melt the butter in a skillet over medium heat.
Stir in the heavy whipping cream, broth and salt and pepper to taste. Simmer until the sauce thickens.
Stir in the Parmesan cheese and remove from the heat.
When the bread layer is done baking, add the turkey breast on top of it, followed by ½ of the crumbled bacon and the tomato slices.
Pour the sauce mixture over the casserole, and top with the remaining crumbled bacon.
Bake for 15 minutes.
Allow to sit for 10 minutes before serving.
