How Many Weight Watchers Points is Cowboy Caviar?

Who Invented Cowboy Caviar?

There are different versions of this Cowboy Salsa, but Boulderlocavor said it originally was invented by Helen Corbitt, the Director of Food Services at Neiman-Marcus in Texas in the early1900s.

You’ll also hear it called ‘Texas Caviar’.

Why Is It Called Cowboy Caviar?

Cowboy Caviar, also known as Texas Caviar or Cowboy Salsa, is a simple salsa/bean salad with a complex flavor.

“Some people call this “Cowboy Caviar” as a nickname to Texas Caviar. It got the name of “Texas caviar” because that’s where it was created – by a woman named Helen Corbitt, in 1940. She actually created the dish in an attempt to add more flavor to black eyed peas for a New Years Eve dish (they are sometimes eaten on NYE for good luck + prosperity in the new year!). Since she didn’t like black eyed peas, she added a whole bunch of goodness on top of it to cover up the taste.”

What Is Cowboy Caviar Made Of?

There are many variations of cowboy caviar recipes on the internet. Some are spicy. Some have avocado. Others may have different kinds of beans. And yet others put in Jalapenos.

I even saw a canned version in Trader Joe’s that looked a lot more like a tomato-based salsa and didn’t even have black-eyed peas.

A healthy cowboy caviar recipe has peppers, beans (including black-eyed peas), tomatoes, cilantro, corn, garlic, lime, onion, and seasonings.

How long can you keep Cowboy Caviar in the fridge?

After you’ve diced all the veggies for the Weight Watchers Cowboy Caviar, toss it with the rest of the ingredients and store it in an air-tight container. It should keep for about a week. You can freeze it for up to 2-3 months.

Gather all the ingredients for the Weight Watcher Cowboy Caviar recipe. Dice the vegetables and put in a large bowl. Drain and rinse beans. (Rinsing well with water helps to remove excess sodium and also aids in digestion.)

In a large bowl, mix chopped green pepper, chopped red pepper, black beans, black eyed peas, cherry tomatoes, cilantro, corn, garlic, onion, squeezed juice from the limes, and lime zest. Mix all ingredients until well blended.

Pour in the vegetable broth and toss.

In a separate bowl, mix broth, maple syrup or honey, pepper, paprika, cumin, and chili powder, until well blended. Pour dressing over vegetables and beans and toss to coat, making sure all ingredients are well blended.

This Cowboy Caviar recipe serves 10, approximately 1/4 cup per serving each, 2 Weight Watchers points each.

Serve with baked tortilla chips, on tacos, on top of a salad, baked potato, or even rice.

  • 1 Red Bell Pepper chopped
  • 1 Green Bell Pepper chopped
  • 15 oz Black Beans canned
  • 15 oz Black Eye Peas canned
  • 1/2 cup Cherry Tomatoes sliced
  • 1/4 cup Cilantro chopped
  • 1/2 cup Corn frozen
  • 2 tsp minced garlic
  • 2 limes juice
  • 1/2 cup onions chopped
  • 1/2 cup vegetable broth
  • 1/4 cup maple syrup
  • 1 tsp ground pepper
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  • In a large bowl, mix chopped green pepper, chopped red pepper, black beans, black eyed peas, cherry tomatoes, cilantro, corn, garlic, onion, squeezed juice from the limes, and lime zest. Mix all ingredients until well blended.

  • In a separate bowl, mix broth, maple syrup or honey, pepper, paprika, cumin, and chili powder, until well blended. Pour dressing over vegetables and beans and toss to coat, making sure all ingredients are well blended.

  • Allow to sit for 1 hour for flavors to blend.

  • Serves 10, approximately 1/4 cup per serving.
